Prep time: 20 mins | Cook time: 15 mins | Yield: 4 servings
An elegant, high-ticket catering favorite that transforms fresh salmon fillets into stunning spiral pinwheels packed with cream cheese, spinach, and garlic herbs.
Ingredients
2 large, skinless center-cut salmon fillets (about 1.5 lbs total)
4 oz cream cheese, softened
1/2 cup fresh spinach, finely chopped
1/4 cup grated Parmesan cheese
2 cloves garlic, minced
1 tbsp fresh dill, chopped
1 tbsp lemon juice
1 tbsp olive oil
Salt and black pepper to taste
Instructions
Make the Filling: Mix softened cream cheese, chopped spinach, Parmesan, minced garlic, dill, and lemon juice in a bowl until smooth. Season with salt and pepper.
Prep the Salmon: Lay salmon fillets flat on a cutting board. Using a sharp knife, slice horizontally along the side of each fillet to butterfly them open into thin, broad sheets.
Roll & Slice: Spread the cream cheese mixture evenly over the salmon sheets. Carefully roll up each fillet lengthwise into a tight log. Slice each log crosswise into 1.5-inch thick pinwheels. Secure each with a wooden toothpick.
Sear & Bake: Heat olive oil in a cast-iron skillet over medium-high heat. Sear pinwheels for 2 minutes per side until golden, then transfer skillet to a preheated 375°F (190°C) oven for 8-10 minutes until cooked through. Serve warm with fresh lemon wedges.
